How is it produced in ice cream shops, etc? You need to slow the gas down, so it does not get blown out of the bag. There are commercial products designed to do this. However, it is much easier to go to the grocery store meat section, and just buy it - by the pound. The ice cream shops may buy it from a commercial producer, or it may be a byproduct of the dehumidified and refrigerated air they use to keep their ice cream cold.
